What we ate and what we're eating

I no longer doubt our ability to eat these vegetables, lol. We did really well this week and it's had me feeling great!

What did we really end up eating last week? It's interesting to see how well we stuck to our plan. The chicken and green beans fed us through Thursday night; I also made yellow squash casserole that night.

Friday night we made macaroni and cheese.
Saturday, we went out for burgers.
Sat morning B went to the farmer's market and came home with a pound of crab claws! So Sunday night I made crab cakes! We had those with Greek salad and more squash casserole. One serving of squash is left and B is having it for lunch tomorrow.

Last week I also started a half-gallon jar of pickles! We are going into the next week still having some zucchini, scallions, bell peppers, anaheim peppers, and green beans. Oh also some potatoes and sweet potatoes.
So what will eat this upcoming week?

Monday: crab cakes, Greek salad, roasted green beans.
Tuesday, Wednesday, maybe Thursday: Cajun white beans; that will use up the remaining bell peppers and onions. Tomato salad. Need to do something with the zucchini, but I don't know what. I could really go for some zucchini bread.
Friday: some kind of quiche, with a potato crust.

I am also going to make some deviled eggs to keep in the fridge for snacks.
