2018 has brought a big lifestyle change for us: we cancelled our CSA box and lately, we've been eating a lot of frozen veggies. We originally cancelled the box because we were super-broke and needed to be more selective in our shopping, and eat specifically to use up stuff in our pantry and freezer. We did that for awhile, buying our veggies at the grocery store or the farmer's market, but right now we're pretty much entirely on frozen veggies. It started when I cut my finger and we've stuck with it due to convenience. It is getting a bit repetitive, but that honestly might be because B does all the grocery shopping lately, and he buys the same stuff over and over again. I think there has been some improvement in the veggie-freezing industry, because frozen veggies are better-tasting than they used to be imo (there was a time that I ate frozen veggies almost exclusively) . Like, I used to think that cut, frozen green beans tasted disgusting, so I was very wary when B brought home a bag of French-cut green beans, but they turned out to be good!
B is struggling with depression and sleep apnea and I'm really focused on Sacred Expansion. So we are relying on frozen veggies to reduce the amount of prep time. We usually cook some kind of meat dish once a week and when that runs out we get a rotisserie chicken or make omelets. For breakfast and lunch I drink a protein shake or have a smoothie (it's easier to get food down when it is liquid.) We were putting tuna salad in the rotation but it doesn't agree with me anymore, so we've stopped that. Now that Romaine lettuce is safe to eat, we will probably be doing a lot of salads. We also like beans so we make bean and cheese quesadillas sometimes, adding other things in as we have them/feel like it.
The government says we should eat 5-8 servings of vegetables a day. I can barely manage 5 servings of food, period, on some days. How do people do it?
If only I could find some frozen bananas, I like bananas in smoothies but I have to buy bananas, cut them, freeze them, pack them, etc and it's a lot of work.
